Healthy Chicken Tortillas

Makes 3 Tortillas (Increase quantities for larger servings)

Ingredients Needed:

  • 3 x Corn Tortillas
  • ¼ cup chopped bell peppers (Red/Yellow or Green)
  • ¼ cup plain feta cheese
  • ½ Lemon or lime (Lemon if you like a more sweet/bitter taste on the chicken)
  • 1 Tablespoon Sriracha (Sriracha gets its heat from red jalapeños peppers)
  • ½ cup chopped red/purple cabbage
  • 1 chicken breast thinly sliced (Sliced on its length for nice long pieces)

Baking Instructions

  1. Preheat oven to 375 degrees.
  2. Place the chicken breast lengths on a baking sheet and coat with Sriracha. Bake for 20 minutes (Check to make sure they cooked through, if not keep them baking till fully cooked.)
  3. Start heating up the tortillas - Warm over medium-high heat, for about 15 to 30-ish seconds on each side. If the tortillas smell toasty, with a few browned or darkened spots, you're doing it right.
  4. Top each tortilla with chopped red/purple cabbage and chopped bell peppers.
  5. When the chicken is finished, place them in the tortilla.
  6. Top each Tortilla with feta cheese and a few drops of lemon or lime
  7. Enjoy!
